Today's Google Doodle celebrates Chilaquiles. It is delicious!

Today's Google Doodle is a foodie's delight. This Doodle celebrates one of my favorite breakfast dishes: the amazing chilaquiles. Ironically, I've made my own chilaquiles not once but twice this week.
According to Google, the doodle was created by Oakland-based guest artist Chava Oropesa.
Chilaquiles are a simple dish, but you can make them however you like. At their most basic, all you need are fried tortilla strips or chips, enchilada sauce, cheese, and a fried egg or two. Cover the chips with enchilada sauce and cheese, heat them up, top with the eggs, and serve. Easy, quick, and delicious!
As with all Mexican food, the types of chilaquiles you'll find in Mexico vary depending on the region.
You can add whatever your heart (or stomach) desires, including avocado, guacamole, salsa, cotija cheese, melted cheese, jalapeños, or slow-cooked pork or chicken. You can think outside the box and make green chile gravy for a hybrid of biscuit and gravy chilaquiles, but you can also use corn muffins instead.
What I'm trying to say is that if you've never had chilaquiles before, this is a great opportunity to put the world right. You can choose between red or green enchilada sauce. I think it's totally fine to use them straight from the can, but if you want to get serious, you could make them from scratch. Just don't overcook your eggs! I like the yolks runny. Another good idea is to make your own tortillas, use them for tacos for dinner, and use the leftovers to fry and have for breakfast the next day.
Chilaquiles can be traced back to ancient Aztec times, but were only introduced to Americans by “Spanish cook” Encarnacion Pinedo in 1898. I've eaten chilaquiles in restaurants in Mexico and the U.S., but most of the time I make them at home.
Delicious hash browns with soft-boiled eggs are another great breakfast option. Nothing beats homemade biscuits and gravy. But if I had to choose only one once-in-a-lifetime breakfast, I would choose chilaquiles. But I also love breakfast tacos.
Or maybe huckleberry pancakes. Nothing beats huckleberry pancakes.
