The annual Godrej Food Trends Report 2024 highlights that people will be driven towards conscious and mindful eating, impacting restaurant menus, home dining spaces and the food and cooking they do. More people will buy and cook with fresh, clean and tasty locally sourced ingredients.
Just like in the fields of fashion and entertainment, culinary masters are predicting the future of the gastronomic world. In April 2024, independent media platform Godrej Vikhroli Cucina hosted an event called “Godrej Food Trends Report 2024.” Industry pioneers came together to discuss the rich food culture, regional cuisines, locally sourced ingredients and products that will be trending this year.
The annual Godrej Food Trends Report highlights the culinary changes that are expected to drive the world of gastronomy. It covers topics related to cooking, food, nutrition and travel with a focus on culinary science. It also gives bloggers and foodies ideas on what to look forward to in the future.
Taniya Dubash, Executive Director and Chief Brand Officer, Godrej Industries Limited, introduced the seventh edition of the report to the audience. 190 guests including food and fitness enthusiast Malaika Arora, celebrity chefs, food bloggers and nutritionists were keen to know the trends that will shape the dining space in 2024.
Taniya Dubash said, “Driven by a desire to embrace and expand the rich diversity of opportunities that arise from our land, the 2024 edition focuses on the theme of place of origin, pointing to deep introspection that will drive innovation and creativity across the Indian food industry.”
“One trend that I am excited about is the pivotal role that women have played in the Indian culinary world in 2024,” said Sujit Patil, vice president and head, corporate brand and communications, Godrej Industries Limited and Associate Companies.

One of the big things we can expect to see in the future is the popularity of Korean food growing exponentially. Korean food's diverse cuisine and bold flavors will capture mainstream attention and become the cuisine of choice for many at home and when dining out. But imagine Korean food served with carefully crafted cocktails. People will be dreaming of celebrity bartenders, pop-ups, and bar takeovers.
Another food trend taking the culinary world by storm is the popularity of ghee. This ancient ingredient, which has been a part of Indian cuisine for centuries, will enjoy renewed respect and popularity among young people and fitness enthusiasts. India will also see a rise in demand for hot sauces made with exotic chillies to add fiery flavour to dishes.
If you're a blogger or food journalist, you should know that local cuisine and taste experiences will drive your content. Story-driven narratives will occupy the space and lead the conversation. Local and hyperlocal ingredients will become the foundation for creative culinary arts, and home cooks will adapt to conscious consumption, driving demand for healthy and nutritious snacks.
Desserts are no longer sinful indulgences but offer a subtle taste sensation along with the use of natural sweeteners, protein-rich foods are at the forefront of health campaigns and high-quality chocolate offers a sophisticated experience.
Regional Cuisine and Global Perspective

In 2024, trends will revolve around regional cuisines and celebrate India's culinary scene. Restaurants and chefs specializing in local cuisines will see a surge in popularity, giving lesser known Indian dishes a chance to shine. This will also bring about a change in global perspective. People will witness the evolution of India's existing culinary scene and appreciate its diversity, rich traditions and vibrant colors.
Indian taste buds are evolving dramatically and people will become more interested in tasting cuisines from around the world, not just Indian food. Among the delicious flavours, Asian and Mexican cuisines will dominate in restaurants and at home.
This will also bring about a change in the dining scene. As more Indians embrace busy lifestyles, dining out and delivery will become part of the trend, which will also drive the trend of safe and healthy cooking. Restaurants will focus on serving tasty and nutritious food and not just processed foods. Conscious eating will push people to buy fresh, clean and tasty ingredients from local stores and markets. Everything from kitchen appliances to menu inspiration will witness a shift towards mindfulness.
